Ingredients:
2 tbsp olive oil
4 cups chopped mixed leftover vegetables (such as carrots, Brussels sprouts, corn, roasted root vegetables and/or greens)
1 1/2 cups chopped leftover ham
1 cup crumbled leftover stuffing
4 eggs, fried sunny-side up
Instructions:
- Heat oil in large skillet set over medium heat; cook vegetables and ham for 5 to 8 minutes or until mixture starts to brown.
- Stir in stuffing; cook for 3 to 5 more minutes or until heated through. Divide among 4 plates and top each with fried egg.
