Veggie Egg Scramble

This simple classic is perfect when you need a healthy meal on the go. It can also be a crowd pleaser for a tasty Sunday brunch.

Serves: 2

INGREDIENTS

4 eggs
Pinch of each salt and pepper
1 tbsp of olive oil
¼ of diced red pepper
2 green onions thinly sliced
½ cup of shredded cheddar cheese

INSTRUCTIONS:

  1. Beat together eggs, salt and pepper; set aside.
  2. Heat oil in nonstick skillet set over medium heat; cook red pepper and onions for 2 to 3 minutes or until softened.
  3. Pour in egg mixture; cook, stirring frequently, for 3 to 5 minutes or until eggs are set and soft curds have formed. Sprinkle with cheese. Remove from heat. Let stand for 1 minute or until cheese is melted.
  4. Divide between 2 Dixie® On the Go Cups with lids.

Tip: Substitute Swiss, Monterey Jack or Gruyère for Cheddar cheese if desired.
