Swedish Yellow Split Pea Soup with Ham

  • Ingredients
    • 3 cups yellow split peas (about 1 ½ lb)
    • 4 cups reduced-sodium chicken broth
    • 4 cups water
    • 2 cups yellow onion, diced
    • 1 cup carrots, diced
    • 1 cup celery, finely diced
    • 8 oz ham, trimmed and diced
    • 1 tbsp fresh ginger, minced
    • 1 tsp marjoram, dried
    • Freshly ground pepper, to taste

    Step 1
    Place the split peas in a medium bowl. Wash with cold water until the water runs clear; drain and spread in a 5- to 6-quart slow cooker.
    Step 2
    Add broth, water, onion, carrots, celery, ham, ginger and marjoram to the slow cooker; stir to combine.
    Step 3
    Cover and cook for 5 hours on high or 7 to 8 hours on low. Season with pepper.

    Make-Ahead Tip: Prep the carrots, celery and ginger and dice the ham; refrigerate in separate containers.
